This is the bag we reach for without thinking. Washed Colombia gives it weight; a natural Ethiopia lifts the finish. We roast it light enough to hold onto the fruit, but not so light it turns sour when you brew in a rush. If a blend can't survive a distracted pour, it isn't much of a blend.

The coffee
70% washed Colombia from Huila, 30% natural Ethiopia from Guji. Farmgate prices are printed on the bag. If one lot runs out, the blend changes and we note it on this page rather than quietly swapping what's inside.
Brewing
Use 60g per litre for filter. Wait four days after the roast date before brewing — coffee straight off the cooling tray is still releasing gas and will taste thin. Store the bag closed at room temperature, not in the fridge.
